If you’ve never tried watermelon feta salad before, you really should! I was shocked by how well the combination of flavours worked together! It is a great addition to any summer meal or bbq!
Watermelon Feta Salad
Ingredients:
- 1/2 a watermelon, so about 4 lbs worth (and yes, I used our baby scale to weigh it!)
- 1 small package of feta cheese, crumbled (about 4 to 6 oz)
- 1/4 of a white onion
- 2 Tbsp balsamic vinegar
- 3 Tbsp olive oil
- 2 Tbsp of chopped fresh mint leaves
- salt and pepper to taste
Cut the watermelon into bite size cubes. Slice the onion as thin as you can get it and add it to the watermelon. Crumble the feta on top.
For the dressing, mix together the balsamic vinegar, olive oil, salt, pepper and mint leaves.
Add the dressing to the salad and toss gently until the salad is coated. Serve immediately (although I have to say that the leftovers are delicious the next day too!).
The most time consuming part is definitely cutting up the watermelon, but once that is done it’s smooth sailing!
This is the first time I have ever bought fresh mint leaves from the grocery store, and I can’t believe how much better they taste than the mint that grows in my garden! I thought mint leaves were all the same, but apparently the wild, uncared for mint that is taking over my garden is not as good as store bought mint! Who knew!?
My favourite part about this salad is the feta cheese. It was such a great flavour combination with the watermelon!
I know this combination of flavours sounds strange at first (or at least it sounded strange to me at first!), but it really is delicious!
