Hi everyone! It’s Alicia from The Baker Upstairs, and I have THE MOST amazing cookie recipe to share with you today. These red velvet chocolate chip cookies are seriously dreamy. The best part is that they’re super easy and quick to make, too!
Not to brag too much, but I’m pretty famous for my chocolate chip cookies. When I was about sixteen, I started bringing homemade chocolate chip cookies to school to share with friends. All of a sudden, I had an abundance of friends. 🙂 Everything was great until I was a senior in high school and met my (soon-to-be) best friend Cortney. I barely knew her, but all of a sudden, everyone was talking about how fabulous HER chocolate chip cookies were. Since I was a typical immature teenager, I was insanely jealous and decided to prove that MINE were the better cookies.
We both spent about a month bringing batch after batch of cookies to school (which our mutual friends loved, of course). One day, I actually tried her cookies for the first time, and I was blown away. They were completely delicious! They had the most amazing taste and texture, the perfect distribution of chocolate chips… they were perfect in every way. The same day, Cortney tried one of my cookies for the first time, and said the same thing! My cookies were absolutely perfect to her, too. We started talking, and discovered that we were both using THE EXACT SAME RECIPE!
That was the start of a beautiful friendship, and these days (15 years later) we still bond over baked goods. As much as I love to experiment with different cookie recipes, I always come back to chocolate chip cookies as my old favorite. I have my favorite basic cookie recipe that always turns out delicious, but these red velvet chocolate chip cookies are a fun new twist!
Red Velvet Chocolate Chip Cookies
The full recipe is at the bottom of this post, but here’s what you’ll need to make these cookies:
- butter
- brown sugar
- sugar
- eggs
- vanilla
- red food coloring
- flour
- cocoa powder
- baking soda
- salt
- chocolate chips
This is my favorite cookie dough base, and I love that it uses melted butter! It gives the cookies a really nice texture. They’re soft and gooey on the inside, and crisp on the outside. Adding an extra egg yolk to the dough also makes it a little richer and softer. I also love the little hint of chocolate flavor from adding a little cocoa powder in place of some of the flour. The red food coloring gives the dough a rich and vibrant red velvet color. Just look at how pretty this dough is!
My secret for beautiful, puffed up cookies that don’t flatten and spread all over the baking sheet is this ingenious shaping method. I start by scooping a one inch ball of dough, then divide the ball in half and stack the two halves on top of each other (almost like building a snowman).
The dough balls bake up into beautifully rounded, thick and chewy cookies. People are always skeptical when they see my cookie shaping method, but they’re believers by the time the cookies come out of the oven. 🙂
Seriously, these are some of the most beautiful chocolate chip cookies I’ve ever seen! The cookies have a perfect shape, and look like they came from a bakery.
As beautiful as they are on the outside, though, it’s the inside where all the luscious melty chocolate is hiding. Can you believe all this amazingness?
These cookies have such a lovely texture, and I love the hint of chocolate flavor in combination with the melty chocolate chips. My husband took some of these cookies to work to share with friends, and he said they disappeared in minutes!
Red Velvet Chocolate Chip Cookies
Ingredients
- 1 cup brown sugar
- 1/2 cup sugar
- 12 tablespoons 3/4 cup butter, melted
- 1 egg plus one egg yolk
- 2 teaspoons vanilla
- 1 tablespoon red food coloring
- 2 cups flour
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 350F. Line two baking sheets with parchment or silicone liners.
- In a large bowl or the bowl of a stand mixer, beat together the brown sugar, sugar, and butter, until well combined. Add the egg, egg yolk, vanilla, and food coloring, and mix until combined.
- Add the flour, cocoa powder, baking soda, and salt, and mix until just combined. Fold in the chocolate chips. Scoop the dough into one inch balls, then divide the balls in half and stack the two halves on top of each other like a snowman.
- Bake 12-14 minutes, or until the cookies look dry on top and are very lightly browned around the edges. Let cool five minutes before removing to a cooling rack.
