These no bake monster cookie energy balls are so easy to make and they taste delicious! They’re a perfect afternoon snack and they actually fill you up. Or at least, they filled me up. I ate two of these an hour before dinner and I barely had an appetite. Which is weird for me, because I normally eat a ton for dinner! I looooooooooooove peanut butter and chocolate. Mmmmm…

When my kids get home from school and daycare they are STARVING. I’ll be frantically running around in the kitchen, about 15 minutes away from getting dinner on the table, and the moment they walk through the door they’ll start hunting through the cupboards for a snack. It drives me crazy. So in the end, they complain so loudly that I give them a banana. But it’s not enough. So I give them a cookie (don’t judge me). And that isn’t enough either. So I give them a few mini rice cakes. And then they don’t eat their dinner. *sigh* It’s annoying me just writing about it, but it happens way more often than I’d like to admit!


These monster cookie energy balls really seem to curb my kids’ appetites and they really are delicious! Not that they’re the best solution for when it’s 15 minutes before dinner, but it’s better than them scavenging the cupboards for a giant snack that ruins their appetite. And the kids are kind of fooled by the chocolate, so they think it’s a treat. And I guess it is mostly a treat, but it does have healthy oats and protein dense peanut butter in there. So it’s not all bad. (That’s where you chime in and say, “Don’t worry Debbie, you’re still a good mom for feeding these treats to your kids 15 minutes before dinner”. Come on. No? Darn.).

And besides being delicious, these monster cookie energy balls are super easy to make too! It only takes about 10 minutes to throw all the ingredients together. And best of all, there’s NO BAKING! I love a good, quick recipe that you can throw together in ten minutes when you’re really hungry! You can just make them and eat them right away! (Although, I do like to let mine harden a bit in the fridge, but that’s just optional).


I’m craving them again, just looking at the photos. Yum!


No Bake Monster Cookie Energy Balls


The full, printable recipe is at the bottom of this post, but here’s what you’ll need:



  • Peanut Butter

  • Large Flake Oats

  • Honey

  • Mini M&M’s

  • Mini Chocolate Chips

  • Vanilla


They’re ridiculously easy to make! I was inspired by the awesome recipes at Simple Green Moms and Like Mother Like Daughter.

Now here’s the really complicated recipe.  You ready? (I hope you can sense my sarcastic tone…)


Add all of the ingredients to a bowl and stir them up. Yup. Pretty easy!

Mix them together with a spoon until everything is combined.

Then roll them into 1.5″ balls and place them on a silicone baking mat or parchment paper.  I had to wash my hands after rolling every 4th ball or so to keep them from sticking to me.

I’m going to let you in on a little secret. After you stir everything together, the M&M’s get a little dirty. So if you want them to look a little bit more “tidy” press some clean M&M’s to the outside right after you make the balls. You definitely don’t have to do that, but it really helps to make them look “pretty” if you’re taking them anywhere. I’m guessing you and your kids won’t care if you’re just eating them at home.

If you want to make them healthier, you can leave out the M&M’s and replace them with peanuts, chia seeds and/or flax seeds. There are lots of options!

No Bake Monster Cookie Energy Bites


These monster cookie energy balls are soooooo good!

Servings: 16

Ingredients

  • 1 1/2 cups large oat flakes
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/4 cup mini M&M's
  • 1/4 cup mini chocolate chips
  • 1/2 tsp vanilla

Instructions

  • Add all of the ingredients to a medium sized bowl and stir well until everything is combined.
  • Roll into 1-1/2" balls and set them on a silicone baking mat or parchment paper. Wash your hands after every 4 balls to help keep the ingredients from sticking to your hands.
  • Refrigerate for 20 minutes to help them harden. (Optional).
  • Store the leftovers in a zip lock bag in the fridge.
