No-Bake Chocolate Peanut Butter Energy Bites

These no-bake chocolate peanut butter energy bites might be my new favourite snack – I was seriously swooning from the moment I took my first bite! Because chocolate and peanut butter might be the best combination ever invented. Period. Don’t you think!? If you’re a peanut butter and chocolate fan, trust me when I say you NEED these in your life.


I based this recipe on the Monster Cookie Energy Bites I made awhile back. I wanted to try a chocolate version with cocoa powder, but I didn’t want to scare my kids off by adding flax or chia seeds. Every time I try to “hide” healthy ingredients in my cooking (especially quinoa…) my 7 year old lifts one of her eyebrows and says in a lecturing tone, “I can see what you’re trying to hide in here and I don’t like it!”.


So I added chopped peanuts to keep up the protein level in these energy bites – you know, the kind you sprinkle on top of ice cream sundaes?  The crunch of the peanuts seriously takes the flavour combination over the top. Oh-my-chocolatey goodness, I seriously can’t resist!

It only takes one of these portion controlled balls of heaven, to satisfy my hunger and my sweet tooth. Usually I have to stop myself from over-eating, but I actually feel full after eating just one of these chocolate peanut butter energy balls.


I did a quick google search for nutrition calculators and after entering the ingredients I used here, the first calculator I tried said each ball has about 5 grams of protein. I have no idea how accurate that is? It seems reasonable enough because they really are an awesome snack that will curb your appetite when your afternoon cravings start. Or morning cravings. Or evening cravings.


No-Bake Chocolate Peanut Butter Energy Bites


The full printable recipe is at the end of this post, but here’s what you’ll need:



  • Uncooked Oat Flakes (I used 1 minute oats)

  • Peanut Butter

  • Honey

  • Cocoa Powder

  • Chopped Peanuts

  • Mini Chocolate Chips (optional)


I added mini chocolate chips because, well, I’m a sucker for chocolate. But if you want to remove the chocolate chips to make them even healthier, the cocoa powder will give you plenty of chocolatey goodness on it’s own.



I ended up using regular Kraft smooth peanut butter. I was going to try natural peanut butter, but the jar I bought was really liquidy and I was worried the balls wouldn’t be hard enough if I used it.


The chopped peanuts came from the bulk store, but I’m pretty sure you can find them in the baking section at the grocery store. It’s pretty much exactly the type of peanuts you get from McDonald’s with their sundaes.



How to Make Them


Mix together all the ingredients until they are completely combined.


The energy bites should be able to hold a ball shape. If they are too dry and crumbly, mix in some more peanut butter. If they are too wet and gooey, add some more oats.



How To Roll Them


Roll the mixture into balls. Wet your hands slightly after every 4 balls or so to keep the mixture from sticking to your hands.


I made 12 balls that were about 1.5 inches wide, but you can make them smaller if you like. Anywhere from 1 inch to 1.5 inches is a good sized energy bite.



If they are really soft, you can put them in the fridge to harden up for about 20 minutes.

How To Store Them


I like to store them in the fridge because it helps them keep their ball shape.


But these peanut butter chocolate energy bites will survive perfectly fine on the counter for a few days as well. (If they don’t disappear first!)

And did I mention that they are family approved? My husband loved them. My 7 and 4 year olds were happy to eat them as an after school snack. And my 9 year old ate 2 of these balls after school yesterday. Then she couldn’t finish her tacos (which is her favourite meal by the way) at dinner an hour later. These have a sneaky way of filling you up quickly!

Ingredients

  • 1 1/2 cups oat flakes I used 1 minute oats
  • 1/2 cup smooth peanut butter
  • 1/3 cup honey
  • 1/4 cup cocoa powder
  • 1/4 cup chopped peanuts
  • 1/4 cup mini chocolate chips optional

Instructions

  • Add all of the ingredients to a medium sized bowl and mix well until everything is combined.
  • Roll into 1 1/2 inch balls and set them on a parchment lined baking sheet. Wet your hands slightly after every 4 balls or so to help keep the mixture from sticking to your hands.
  • Refrigerate for 20 minutes to help them harden (optional).
  • Store the leftovers in the fridge.

Notes

If the mixture is too crumbly, add a bit more peanut butter. If the mixture is too wet, add some more oats.
