Hello again! It’s Alicia from The Baker Upstairs, back with another delicious cookie recipe to share! Of all the different flavor combinations out there, I think peanut butter and chocolate has to be the very best one. That combination of sweet and salty is pure perfection. The two flavors were just made for each other! It’s not just me, though… my whole family is obsessed with peanut butter and chocolate. My husband has asked for this chocolate peanut butter layer cake for the last five birthdays in a row, and it’s always completely gone within a day or two. I’ve even caught my five year old scooping peanut butter on a spoon, then smashing chocolate chips on top and shoving the whole spoonful into her mouth.
As much as I sometimes dislike having to hide all of my Reese’s cups so that everyone in my family doesn’t steal them, it’s nice to know that I can make everyone happy with a tasty peanut butter and chocolate dessert. That’s where these chocolate peanut butter cereal cookies come in! They’re super easy to make, bursting with chocolate and peanut butter flavor, and my whole family loves them!
We had quite the debate at our house about what these should actually be called, though. The original recipe I found on Suzie the Foodie called them no bake cookies, but my two little girls insisted that they were more like candy bars, and less like cookies. I can definitely see their point… the cookies are chewy, with an almost caramel-like texture, and a great crispy crunch from the Special K cereal. The richness of the chocolate and peanut butter together make them extra decadent and sweet. Whatever you call them, though, they’re totally delicious!
No-Bake Chocolate Peanut Butter Cereal Cookies
The full printable recipe is at the end of this post, but here’s what you’ll need:
- sugar
- light corn syrup
- vanilla
- salt
- peanut butter
- chocolate chips
- Special K cereal
These cookies are so simple and easy to make, and I love that they use only one pot. Having less dishes to clean is always a huge win in my book! You’ll start by mixing together your sugar, corn syrup, vanilla, and salt, and bringing the mixture to a boil.
Once it’s boiling and bubbly, let it cook for another two minutes, stirring occasionally. Be very careful not to splatter any of the mixture on yourself as you stir, because it will be very hot.
After two minutes, remove the pan from the heat and stir in your peanut butter, mixing until smooth. Once the peanut butter is mixed in, add your chocolate chips and stir gently until they are melted completely.
Seriously, look at all that melty chocolate peanut butter goodness! The mixture smelled so good by this point that it was all I could do not to stick my finger in for a taste. (Thankfully common sense prevailed and I avoided burning my fingers!)
Next you’ll mix in your Special K cereal. Make sure it’s the original flavor (crispy rice flakes) and not the other flavors that have corn flakes. If you can’t find or don’t like Special K, you could definitely substitute Rice Krispies cereal instead. You’ll want to stir gently, so you don’t break up the cereal too much.
Next you’ll drop your cookie mixture by rounded spoonfuls onto wax paper or parchment to cool. I used a one tablespoon cookie scoop to make all of mine the same size, and the cookies were the perfect portion size for me. They’re so rich and decadent that I ate one and was totally satisfied (though I will add that my husband ate four in one sitting, and still wanted more!).
From there, let the cookies cool completely before serving. As they cool, they’ll firm up a little so they don’t melt all over your hands as you eat them. If you’re in a big hurry, you could just pop them in the fridge or freezer for a few minutes to cool them down quickly.
These chocolate peanut butter cereal cookies really do have it all! I love the combination of flavors, and the texture is absolutely perfect. They’re like a delicious hybrid between a cookie and a candy, in the best way! Best of all, they’re so easy to make that you can enjoy them any time that chocolate and peanut butter craving hits. Which is pretty much all the time, at my house! 🙂

Ingredients
- 1 cup sugar
- 1 cup light corn syrup
- 2 teaspoons vanilla
- 1/2 teaspoon salt
- 1 1/2 cups peanut butter
- 1 1/2 cups semi-sweet chocolate chips
- 5 cups Special K original flavor cereal
Instructions
- In a medium saucepan, stir together the sugar, corn syrup, vanilla, and salt. Heat the mixture over medium heat until it starts to boil. Boil 2 minutes, stirring occasionally.
- After two minutes, remove the pan from the heat and stir in the peanut butter, until smooth. Add the chocolate chips, and stir until melted. Stir in the Special K cereal until coated.
- Drop the mixture by rounded spoonfuls onto wax paper or parchment. Allow to cool completely before serving.
These delicious chocolate peanut butter cereal cookies are the perfect combination of salty and sweet, with a fantastic crispy and chewy texture. If you love chocolate and peanut butter like I do, these will definitely be a new favorite!
