Hello again! It’s Alicia from The Baker Upstairs, and I have a super easy dessert recipe to share with you today. These cookies and cream rice krispie treats are the perfect summer dessert! They’re easy to make, totally delicious, and won’t heat up the whole kitchen on a hot summer day. They’re so simple the kids can help you make them too!
My husband is an absolute die-hard cookies and cream fan. Cookies and cream flavored cake, ice cream, candy bars… you name it, he loves it! We go through Oreos so quickly at our house, because he not only loves to eat them by themselves, but also likes to crush them and mix them into other things like yogurt or ice cream. It’s always fun to come up with new and creative ways to surprise him with the cookies and cream flavor that he loves, but these cookies and cream rice krispie treats are one of our old standby recipes. I make them often because they’re so simple and easy to make (and have just five ingredients!) but they still have all of the cookies and cream flavor that he loves.
These rice krispie treats are so simple, but still totally delicious! I usually just make them with the original flavor Oreo cookies, but there are so many fun new variations of Oreos that it would be fun to experiment with other flavors. I think these would be particularly delicious with mint flavored Oreos or peanut butter Oreos!
Cookies and Cream Rice Krispie Treats
The full recipe is at the bottom of this post, but here’s what you’ll need:
- butter
- mini marshmallows
- white chocolate chips
- rice krispies cereal
- Oreo cookies
Rice krispie treats are about as simple and easy to make as desserts get! These particular treats are super delicious because of the addition of chopped Oreo cookies and white chocolate. The white chocolate makes them extra sweet and creamy, and the Oreos add a touch of chocolate flavor and some fun texture. I like to make mine on the stovetop, but you could easily make these in the microwave instead if you prefer.
Once the rice krispie treats are all mixed together, press them into a 9 x 13 pan to cool. I like to line my pan with parchment or foil to make them easier to lift out, but you can just grease the pan with cooking spray instead if you prefer. If your treats are pretty sticky, it may help to spray your hands with cooking spray before pressing the mixture into the pan.
Let the treats cool to room temperature, then cut them into squares. If you wait until they’re completely cool, they’ll be much easier to cut. They will keep fresh for several days if stored in an airtight container.

The little chunks of Oreo cookie make them extra tasty and so irresistible, and they’re totally delicious in combination with the white chocolate flavor. Cookies and Cream Rice Krispie Treats
Ingredients
- 1/2 cup butter cut into pieces
- 1 package 10 ounces mini marshmallows
- 1 cup white chocolate chips
- 7 cups rice krispies cereal
- 2 cups chopped Oreo cookies
Instructions
- Spray a 9 x 13 pan with cooking spray or line with parchment paper, and set aside.
- In a large pot, melt the butter over medium heat. Add the mini marshmallows and cook, stirring frequently, until melted. Stir in the white chocolate chips until melted completely.
- Remove from heat and stir in the rice krispies cereal and Oreo cookies. Pour the mixture into the prepared pan and press into an even layer. Cool to room temperature before serving.
These cookies and cream rice krispie treats have only five ingredients, and taste amazing. They’re so easy to make, and perfect for cooking with the kids!
