Hello again! It’s Alicia from The Baker Upstairs, and I’m excited to share another fantastic recipe with you today. These cookie butter blondies are so delicious, and have a totally unique flavor. They’re so soft and chewy, loaded with white chocolate chips, and have the deliciousness of cookie butter in every bite!
If you’ve never tried cookie butter before, then you are in for a treat. It’s made from ground up Biscoff or Speculoos cookies, and it tastes heavenly. The cookies have a sweet and mild gingerbread flavor, and they’re ground into a paste that’s about the consistency of peanut butter. It’s delicious on toast or waffles, and great as a fruit dip! You can use it pretty much anywhere you would use peanut butter or hazelnut spread, and it adds so much delicious flavor!
There’s a raging debate as to whether Biscoff spread or Trader Joe’s Cookie Butter is better, but the truth is that I like them both equally! They’re nearly identical anyway. I’ve purchased both multiple times, and I really can’t tell much of a difference between them. I’ve seen Biscoff at the grocery store, as well as Target and Walmart, so it may be easier to get your hands on if you don’t have a Trader Joe’s store nearby. It’s definitely worth trying, though! As delicious as it is to eat plain, it’s also really fun to bake with. These cookie butter blondies are a great way to show off that delicious cookie butter flavor, in a soft and chewy cookie bar that’s totally irresistible!
Cookie Butter Blondies
The full recipe is at the bottom of this post, but here’s what you’ll need:
- butter
- brown sugar
- sugar
- cookie butter
- eggs
- vanilla
- flour
- baking soda
- salt
- white chocolate chips
The dough for these blondies is quick and easy to make, and you can use a stand mixer or a hand mixer to make them. The dough is made from ingredients I always have on hand, so it’s super easy to mix up a batch when I need a sweet treat!
After the dough is all mixed together, press it into an even layer in a 9 x 9 baking dish. It should be pretty thick and not very sticky, so it will be pretty easy to press with your hands. I like to sprinkle a few chocolate chips on top to make the finished bars prettier.
The blondies are finished when a toothpick inserted two inches from the side of the pan comes out clean. It’s a good idea to let them cool completely before slicing and serving, so they will hold together better.
These blondies are so rich and buttery, and the cookie butter shines through beautifully. The creamy and sweet white chocolate chips are a perfect complement to the cookie butter. I love that the edges are crisp, while the insides are soft and tender.
If you’re making these blondies ahead of time, they will keep for several days if stored in an airtight container. I’ve found that they’re great for taking on picnics or bringing to barbecues, because they keep well and are easy to eat.
These cookie butter blondies are so easy to make, and so delicious too! My favorite way to serve them is warm with a scoop of vanilla ice cream on top (and maybe a little hot fudge sauce to even things out nicely). They’re also delicious just by themselves. Cookie Butter Blondies
Ingredients
- 1/2 cup butter softened
- 1 cup brown sugar
- 1/2 cup sugar
- 1/2 cup cookie butter
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups white chocolate chips
Instructions
- Preheat the oven to 350. Line a 9 x 9 baking dish with foil or parchment.
- In a large bowl or the bowl of a stand mixer, cream together the butter, brown sugar, sugar, and cookie butter. Add the eggs and vanilla extra, and mix until well combined.
- In a small bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix until the dough comes together. Add most of the chocolate chips, reserving a few to sprinkle on top of the blondies.
- Spread the dough evenly in the prepared pan, then sprinkle the remaining white chocolate chips over the top. Bake 35-40 minutes, or until a toothpick inserted two inches from the side of the pan comes out clean.
- Let cool completely before slicing and serving.
