Hello again! It’s Alicia from The Baker Upstairs, and I’m so happy to be back sharing another tasty recipe with you. This simple blueberry shortcake is so easy to make, and it’s the perfect way to show off those sweet summer berries!
It occurred to me this week that my kids have only a few weeks left of school, and I am getting super excited for summer break! I’m so looking forward to popsicles on the porch, grilling on the patio, and playing at the park every night. As much as I don’t love the heat, I love that everything is so low-key during the summer, and we don’t have to stick to any particular schedule. There’s so much freedom!
One of my favorite new things that my family tried last summer was to have one-on-one cooking time with each of my kids every week. I’m really excited to continue that again this summer! I’m fairly impatient by nature, so sometimes it’s hard for me to have the patience to teach them cooking skills, but they love to learn and it’s a great way to spend time together. This simple blueberry shortcake is the perfect recipe for beginners. It’s very kid-friendly and easy to make, and uses ingredients that I nearly always have in the pantry and fridge. My kids love to use my pastry blender to mix in the butter, and they have so much fun cutting out the biscuits. This is definitely a recipe that we’ll be making on repeat this summer!
The base for this shortcake is an adaption of my absolute favorite biscuit recipe. I make these biscuits at least once a week, and they are always practically inhaled by my family. I bumped up the sweetness in the biscuits just a little, brushed the tops with butter, and sprinkled them with sugar. They are the perfect complement to the sweetened whipped cream and fresh berries!
Simple Blueberry Shortcake
The full recipe is at the bottom of this post, but here’s what you’ll need:
- flour
- sugar
- salt
- baking powder
- butter
- buttermilk
- blueberries
- whipping cream
The key to light and tender biscuit dough is to not overwork it. You want to handle it as little as possible. Mix it just until it comes together, and then lightly pat it into a rectangle. Folding it into thirds helps to create layers in the dough, which makes it even more flaky.
Cut as many biscuits from the dough as you can, then push the extra bits together, pat them into a rectangle and cut out as many as you can. The biscuits from the second roll-out will be a little more wonky looking, but you definitely don’t want to waste any of that dough!
I like to brush the biscuits with melted butter and sprinkle them with sugar to create a sweet and crisp top. Just look at those sugar sprinkles!
Assembly couldn’t be easier – just add a dollop of sweetened whipped cream, then sprinkle with fresh blueberries. Obviously you can use any fresh fruit that you like, but my family absolutely loves the blueberries! I am totally nuts for homemade whipped cream, but if you’re short on time, you can use canned whipped cream instead.
These simple blueberry shortcakes are the perfect make-ahead dessert! You can make the biscuits and whip the cream ahead of time, and then just store the whipped cream in the fridge until you’re ready to serve.

Simple Blueberry Shortcake
Ingredients
for the biscuits
- 2 cups flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup cold butter
- 3/4 cup buttermilk
for topping:
- 1 tablespoon butter melted
- 2 teaspoons sugar
for assembling:
- 1 cup heavy whipping cream
- 2 teaspoons sugar
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 450. Line a baking sheet with parchment or silicone and set aside.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Grate the cold butter into the flour mixture, and toss to coat. Pour in the buttermilk and mix just until the dough comes together. (Be careful not to over-mix!)
- Pat the dough out to an even layer, about one inch thick, on a lightly floured surface. Fold the dough into thirds, as though you are folding a letter. Pat the dough out again until it is about one inch thick.
- Cut the dough into circles using a biscuit cutter or small cup. Brush with melted butter and sprinkle with sugar. Bake 10-12 minutes, or until golden brown on top. Allow to cool completely.
- To assemble, beat the whipping cream until light and fluffy. Add the sugar and beat until smooth. Split a biscuit in half, then scoop a spoonful of whipped cream onto the biscuit. Sprinkle with fresh blueberries and enjoy.
