Chocolate Saltine Cracker Toffee

My kids love candy, but they really haven’t developed a taste for home baked goodies yet. Which KILLS me. I have all these fun recipes I want to try, but my gluten free husband won’t eat them, and my crazy kids take a bite and say “Um, mommy, that’s too sweet!” Too sweet!? You’ll eat pounds of sugar coated gummies (if I let you), but my fresh cakes, bars and cookies are too sweet!? Little weirdos.


So I made these chocolate saltine cracker toffee bars anyway, and holy cow, they are amazing. Like, make-sure-you’re-not-hungry-or-you’ll-eat-the-whole-pan AMAZING. I ate a lot of these. Too many. I took the rest to work to get my coworkers to eat them (who coincidentally also thought they were delicious), but I’m pretty sure I ate at least half a pan by myself. It took about 3 days, but still… I should probably work on my self control.

I never would have guessed that you could make a sweet treat with crackers, but it’s a pretty great (and foolproof) recipe! It only takes about 15 minutes, and they taste soooooooo good.


Saltine Cracker Toffee


The full printable recipe is at the bottom of this post, but here’s what you’ll need:



  • Brown Sugar

  • Chocolate Chips

  • Butter

  • Saltine Crackers

  • Aluminum Foil

  • Cooking Spray

Line a cookie sheet with aluminum foil and set out the saltine crackers on top. If you want the toffee to be thin, don’t overlap the crackers. If you overlap the crackers, like I did, they’ll be a little thicker and more “bar” like. Either way is perfectly delicious! So just have fun with it!

Is there anything more delicious than butter and sugar? I think not. If you have a small pot with a spout, this would be a great time to use it! These are my grandma’s glass pots from years and years and years ago.

After you melt and boil it (see the recipe at the bottom), pour the mixture over the saltine crackers. If you want, you can spread it out with a knife, but I found that it settled pretty evenly on it’s own once I baked it.

Next, spread the chocolate chips on top of the warm toffee. I wanted to speed up the process a bit, so I put it back in the oven for about a minute to completely melt those chocolate chips.

And then just spread out the chocolate evenly using a spatula.

Since Valentine’s Day is coming, my three year old and I decorated them with red, pink and white sprinkles and hearts.

Or you can top them with chopped pecans or even M&M’s. Mmmmm…

Put them in the freezer for half an hour to get them to set. I used a sharp knife to cut them into squares, but you can just break them with your fingers if you want to.

These will last up to a week in an air tight container (if you can stop yourself from eating them). My chocolate seemed to get spots all over it by the next day, as anything made with chocolate chips sometimes does, so just keep that mind if you plan to take them anywhere. Even with the spots, they still tasted amazing!

Saltine Cracker Toffee


These chocolate saltine cracker toffee bars are incredibly addictive!


Servings: 36 (approx)

Ingredients

  • 1-1/3 sleeves of saltine crackers Approximately 50 crackers
  • 1 cup butter
  • 1 cup brown sugar packed
  • 2-1/4 cups chocolate chips

Instructions

  • Pre-heat the oven to 325°F.
  • Line a medium sized cookie sheet with aluminum foil and then spray it with non-stick cooking spray.
  • Place the saltine crackers out on the cookie sheet until it's completely covered. (If you overlap the crackers, they'll be thicker in the end)
  • Melt the butter and sugar over medium low heat. Then bring to a boil for 3 minutes, stirring constantly.
  • Pour the bubbly mixture evenly over the saltine crackers. If you missed any big areas use a knife to spread it out, but it should settle evenly when it bakes.
  • Bake it at 325°F for 8 minutes.
  • Remove the cookie sheet from the oven and then sprinkle the chocolate chips evenly on top.
  • Return the cookie sheet to the oven for another 1 to 2 minutes to help melt the chocolate chips.
  • Use a spatula to spread the melted chocolate evenly.
  • Decorate with sprinkles, M&M's or chopped pecans.
  • Place in the freezer for 30 minutes.
  • Break it apart, or use a sharp knife to cut it into squares.
