Hello One Little Project friends! It’s Alicia from The Baker Upstairs, and I’m back with another tasty dessert recipe to share today! These caramel stuffed chocolate chip cookies are the stuff dreams are made of. They’re gooey, indulgent, loaded with chocolate and caramel, and best of all, they’re super easy to make!
I’ve mentioned before that I bake a lot of cookies. And by that, I mean A LOT of cookies. Between my stress baking habit, and all the posts I do for my own blog, I always seem to have treats coming out of my ears. 🙂 Lucky for me, my husband is a nurse on a busy cardiac unit, and his co-workers LOVE when he brings in treats. All those hardworking nurses on the night shift need a little sugar rush to help them get through the night! It has gotten to the point that the moment my husband walks in the door, his co-workers ask what kind of treats he has brought with him. He just smiles and gladly hands over the goods.
Because he brings treats in so frequently, my husband is a pretty popular guy on his unit. He got a valentine card from a co-worker earlier this year that said, “We love your calm presence, and your wife’s baking skills.” 🙂 It’s silly, but it’s kind of fun for me to dream up new and yummy desserts to share with them. I’ve sent along fresh baked bread with honey butter, brownies, cupcakes, homemade donuts, you name it! Chocolate chip cookies are probably the most popular treat I’ve sent, though. They’re simple and easy to make, and everyone loves them. These caramel stuffed chocolate chip cookies are a fun new twist on my favorite chocolate chip cookie recipe, and they have the official cardiac unit seal of approval!
Caramel Stuffed Chocolate Chip Cookies
The full recipe is at the bottom of this post, but here’s what you’ll need:
- butter
- brown sugar
- sugar
- eggs
- vanilla
- flour
- salt
- baking soda
- mini chocolate chips
- Rolo candies
The cookie dough is so easy to make, and you don’t even need a mixer! I’ve made this recipe so many times that I could probably make these cookies in my sleep. 🙂 It is definitely the best tasting cookie dough in the world, but try to save it for the actual cookies, because they’re worth the wait!
After the dough is mixed up, you’ll scoop out golf ball sized balls of dough, then flatten them in your hand. Press a Rolo candy into the middle of the dough, then wrap the dough around the candy, covering it completely.
Once you’ve rolled them into balls, place the dough balls on a baking sheet lined with parchment or silicone, being sure to leave room for them to spread.
Bake the cookies in the oven until they’re just slightly golden on top, then let them cool on the baking sheet for 5-10 minutes before moving them to a cooling rack. Because the candies inside are hot and melty, they need a few minutes to set up so the cookies can hold their shape.
They look like regular chocolate chip cookies from the outside, but once you break them open, you discover the gooey caramel center! Not only do the Rolo candies add a delicious chocolate and caramel flavor, they also help the cookies stay soft and chewy and give them a fabulous texture.
I bake a ton of chocolate chip cookies, but I think these caramel stuffed chocolate chip cookies are maybe my very favorite. Chocolate and caramel are always a fantastic combination, and these cookies are amazing!
Caramel Stuffed Chocolate Chip Cookies
Ingredients
- 12 tablespoons butter melted
- 1 cup brown sugar packed
- 1/2 cup sugar
- 1 egg + 1 egg yolk
- 1 teaspoon vanilla
- 2 1/4 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 cup mini chocolate chips
- 30 Rolo candies
Instructions
- Preheat the oven to 350 and line two baking sheets with parchment or silicone liners.
- In a large bowl, whisk together the butter, brown sugar, and sugar. Add the egg, egg yolk, and vanilla. Add the flour, salt, and baking soda, and stir to combine. Stir in the chocolate chips.
- Scoop golf ball sized balls of dough, press flat in your hand, and place a Rolo candy in the middle of the dough. Wrap the dough around the candy, covering it completely, and place seam-side down on the prepared baking sheet.
- Bake 11-12 minutes, or until just browned on top. Remove and let cool 5-10 minutes before moving to a cooling rack.
These caramel stuffed chocolate chip cookies are the perfect indulgent treat! They’re so easy to make, and loaded with gooey caramel!
