Rice Krispie Treat Monsters

Edible candy eyes are pretty much the best baking invention ever, aren’t they? I think I’ve fallen in love with them. And this was the first time ever that my craft store actually had the small size, the medium size and the large sizes all in stock. AND they were on sale. Bless my lucky stars, that never happens to me!


These Rice Krispie Treat Monsters let me take my candy eye obsession to a whole new level. You get to go a little crazy with them, which I personally think is AWESOME. These little monsters are so easy to make, and they look so fun when you set them out on a serving plate. It’s like a little monster invasion sitting there on the table.


My kids are starting to think that since I’m a blogger, I get to stay home and make weird stuff all day (ok, that might be true…) – but they LOVE to help me out by eating whatever I make. On the walk home from school each day, my 6 year old will ask “What did you make today Mommy?” and if I say, “Nothing sweetie, I was busy with other things today!” she furrows her brows and says, “Mommy!!” in a disapproving tone. She means business. Ha! It’s like I have my own little blogging police to make sure I get my work done.

My 4 year old candy addict has been calling these “Monster Krispies” which I think is totally fitting (and super cute… but I might be biased…)


I got the idea from A Girl After My Own Heart. She threw a FABULOUS monster first birthday party for her daughter and made these little guys. Such a fun and super simple idea!


Rice Krispie Treat Monsters


The full printable recipe is at the end of this post, but here’s what you’ll need:



I decided to go with pink, green, blue and orange monsters, but you can do any combination you like!

And then of course my beloved small, medium and large candy eyes. (Aren’t they the cutest things EVER!?)

There aren’t very many things I like to bake from scratch, but Rice Krispie Treats are definitely one of them. Spend the 10 minutes and make them yourself. The prepackaged ones aren’t nearly as tasty!

I made mine in a 9″ x 13″ baking pan, dumped them onto a cutting board and cut them into 21 rectangles.

I followed the directions on the back of the bag of candy melts, which was pretty much to microwave them on 50% power for 1 minute, stir, and keep microwaving at 50% power for 30 seconds at a time until they are completely melted.

I also recommend adding a little bit of cooking oil after they’re melted. Not a lot. Maybe 1/2 teaspoon to 1 teaspoon per 1/2 cup of candy melts. It really helps to thin it it out. The more oil you add, the smoother the finish will be after you dip the Rice Krispie Treats. If you don’t add any oil at all, the finish will be bumpy. For monsters, a clumpy texture totally works, so it’s up to you!


Just remember, the more oil you add to the candy melts, the smoother the finish will be, BUT the longer it will take to harden and the easier it will melt onto little fingers.

Dip it into the melted candy melts to get one end completely covered. Then lightly scrape off the excess against the side of the bowl.


In retrospect a bigger bowl would have made this part a lot easier. Ha! Live and learn.

And also learning from my mistakes, I recommend placing them on parchment paper or a silicone baking mat while they harden. I placed mine right on the cookie sheet and I had to scrape with a metal spatula to get them to come off. Oops!

Then add the candy eyes in any spooky combination you like!

For the big eyes especially, put them in place, then gently push them slightly towards the top of the monster’s “head”. The pink monster on the bottom left in the next photo shows how it kind of gives them the look of having eye lids.

Let them sit at room temperature for about 40 minutes or so to completely harden.

If you’re in a hurry, you can put them in the fridge or freezer for 5 to 10 minutes, but don’t leave them in there much longer than that. You want to make sure it’s not long enough for them to cool to the point that they’ll get condensation on them when you pull them out. When they get condensation on them it can create white splotches on the candy melts or cause the black part of the candy eyes to run a little. Always breaks my heart a bit when that happens!

Rice Krispie Treat Monsters


These Rice Krispie Treat Monsters are SO EASY to make, and they're completely adorable!



Servings: 20 to 24

Ingredients

For the Rice Krispie Treats:

  • 1/4 cup Butter
  • 1 Bag Large Marshmallows approximately 40 marshmallows
  • 1/2 teaspoon Vanilla Extract
  • 6 cups Rice Krispies



For the Monster Coating:

  • Candy Melts Pink, Orange, Blue and Vibrant Green
  • Candy Eyes Small, Medium and Large
  • Cooking Oil

Instructions

For the Rice Krispie Treats:

  • Spray a 9" x 13" baking pan with cooking spray.
  • In a large pot, melt the butter over low heat until melted.
  • Add the marshmallows and stir until completely melted and combined with the butter.
  • Remove from the heat and add the vanilla extract and the Rice Krispies. Stir to combine.
  • Pour the mixture into the baking pan. Using a spatula sprayed with cooking spray gently press down until the pan is evenly coated.
  • Allow to cool until firm.

For the Monster Coating:

  • Melt approximately 1 cup of candy melts in a small bowl in the microwave at 50% power for 1 minute. Stir and then continue microwaving at 50% power for 30 seconds at a time until completely melted.
  • Add approximately 1/2 teaspoon to 2 teaspoons cooking oil (the more you add the smoother the finish, but go slowly) to the melted candy melts and stir to combine.
  • Dip the Rice Krispie Treats in the candy melts and set on parchment paper.
  • Gently press the candy eyes into the candy melt coating to create your monster faces. Gently push the eyes slightly up towards the top of the monster's "head" to create upper eye lids.
  • Allow to cool at room temperature for approximately 40 minutes or until candy melts have completely hardened.
