Hello again! It’s Alicia from The Baker Upstairs, and I have a delicious smoothie recipe to share with you. This tropical green smoothie is super delicious, so easy to make, and healthy, too. It’s the perfect way to start the day off right!


I always breathe a little sigh of relief once my kids are back in school. I really love having them around during the summer, and it’s fun to spend our days out having adventures, visiting the park or the splash pad, and generally relaxing. But it also makes it much harder to keep up on all of my goals and projects. During the summer, it seems like the house is always a little messier, our meals are a little more slapdash, and I can never seem to keep up with my inbox. Fall is a great time to reorganize and get back on track, especially because I have a little more breathing room without two kids to entertain 24-7.


One of the most important things that has sadly been left by the wayside a little this summer is our goal to eat healthier as a family. We made a goal at the beginning of the year to eat five fruits and vegetables every day, and we did really well with that goal until ice cream season started. During the summer, we ate way too many hot dogs and donuts, and not nearly enough fruits and vegetables. It’s definitely time to get back on track! I’ve found it really helpful to start the day with a good serving of fruit. It makes it feel much more doable to get in the rest of our fruits and vegetables for the day. This tropical green smoothie is perfect. Not only is it healthy, it’s totally kid-friendly and tastes amazing, too!

The ingredient list is short and sweet, and it’s pretty adaptable depending on your tastes and the availability of ingredients. I nearly always have frozen mango and pineapple in my freezer, which makes this particular smoothie combination super easy to make, but you can easily substitute whatever combination of fruit you have on hand. I’ve found that adding a cup of baby spinach is the perfect amount for my somewhat picky children, but you can definitely add more if you want to pack in even more nutrients.

I have to say, you will never catch me eating a spotty banana by itself (blech!), but they are absolutely the best for smoothies. They add so much sweetness and creaminess, and make smoothies taste amazing. Since I make 99% of my smoothies with very ripe bananas, I almost never have to add any sweetener to them. They are always perfectly sweetened!

I’ve found the key to getting my kids to drink their green smoothies is to blend the spinach until it’s totally smooth. If they see any tiny little chunks, they start to complain, but they’ll happily drink the smoothie as long as they don’t have to be aware that there’s spinach in it. We like our smoothies pretty thick and frozen, so I add as little milk as possible to make everything blend together smoothly, but you can definitely add more milk if you like it a little thinner.

This smoothie is best when it’s served immediately after it’s made. If you let it sit too long, it will start to separate and won’t be as creamy and smooth. The recipe makes two good-sized adult servings, or four child-sized servings (although my seven year old can drink an adult-sized serving and still want more).

I absolutely love the combination of mango, pineapple, and banana! It makes me feel like I’m on a little island getaway, even when I’m elbow-deep in dishes. Okay, maybe a smoothie isn’t actually a good substitute for a vacation, but it definitely brightens up my morning. Servings: 2 servings

Ingredients

  • 1 ripe banana
  • 1 cup frozen mango chunks
  • 3/4 cup frozen pineapple chunks
  • 1 cup baby spinach
  • 1 cup milk plant-based milk also works great!

Instructions

  • Add all ingredients to a blender, and blend until smooth.
  • Add additional milk as needed to reach the desired smoothie consistency.
  • Serve immediately.
