Reese’s Peanut Butter Cookies

Hello One Little Project friends! It’s Alicia from The Baker Upstairs, and I’m back with another fantastic dessert recipe to share with you. These Reese’s peanut butter cookies are the perfect sweet treat for any peanut butter lover! They’re soft in the middle, crisp on the edges, and packed full of tasty Reese’s candies. These adorable little cookies are so rich and delicious, and easy to make too!


Who else is excited about summer vacation? My kids are finally going to be out of school this Thursday, and I can’t wait for the summer fun to start! A lot of their friends from school are signed up for several weeks of day camp during the summer, but the camps are a little pricy for our budget. Instead of paying for a day camp, we’ve decided to do a “mommy camp” at home. Each week we’ll have a theme, and do art projects, library research, activities, and field trips around that theme. Our first week (coming up next week) is going to be all about food. My kids are going to plan out our weekly menu, help me do the grocery shopping, learn to cook some new recipes, and learn about nutrition. It’s a great way for me to share what I know with them, and I’m really excited!


Along with all of the healthy food we’re planning to make, we will definitely be making some treats too!  Baking with my two little girls is one of my favorite things to do, and these Reese’s peanut butter cookies will be a perfect for us to try. They’re so easy to make, and the kids will love scooping the dough and sprinkling the extra candy on top. More candy is always a good thing!



These cookies are a fun little twist on my very favorite peanut butter cookie recipe. I bumped up the peanut butter just a little, then added my favorite Reese’s candies. I love the combination of peanut butter and chocolate, and they turned out amazing!


Reese’s Peanut Butter Cookies


The full recipe is at the bottom of this post, but here’s what you’ll need:



  • butter

  • brown sugar

  • sugar

  • peanut butter

  • egg

  • vanilla

  • flour

  • baking soda

  • salt

  • Reeses’s minis

You’ll start by creaming together the butter, sugar, brown sugar, and peanut butter until they are well blended. Add an egg and vanilla, followed by your dry ingredients, and then it’s time to fold in the Reese’s candies! The dough should be fairly thick, about the consistency of play dough, and not too sticky.

Next, you’ll scoop the dough out by rounded tablespoons onto a baking sheet. I used my trusty one tablespoon cookie scoop, and I like that it makes the cookies uniform in size and shape. If you don’t have a scoop like mine, then a regular tablespoon will work just fine. Be sure to sprinkle the cookies with a few extra pieces of chopped Reese’s, and then they are ready to bake.

The cookies will puff up as they bake, then flatten a little as they cool. They still end up fairly thick, which helps the center of the cookie stay soft. I let mine cool all the way before serving, so they wouldn’t be quite as messy for my little ones, but I’m sure they would be wonderful warm, too!

These Reese’s peanut butter cookies are soft in the middle, crisp on the edges, and loaded with Reese’s. They’re the perfect treat for any peanut butter lover!

Servings: 2 dozen cookies

Ingredients

  • 8 tablespoons butter softened
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 2/3 cup peanut butter
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 20 Reese's minis chopped

Instructions

  • Preheat the oven to 375. Line two baking sheets with parchment or spray with cooking spray, and set aside.
  • In a large bowl or the bowl of a stand mixer, beat together the butter, brown sugar, sugar, and peanut butter, until smooth. Add the egg and vanilla and beat until smooth.
  • Add the flour, baking soda, and salt, and mix until combined. Gently fold in the Reese's candies, reserving about two tablespoons of candy.
  • Scoop the dough by rounded tablespoons onto the prepared baking sheets. Sprinkle each ball of dough with a few additional pieces of candy.
  • Bake 9-11 minutes, or until just slightly browned around the edges.
