This recipe for pumpkin pie overnight oats is totally genius and tastes SO GOOD! Who doesn’t love dessert for breakfast but with less guilt?! Overnight oats are such an amazing time saver, and one of my favourite comfort foods. They are delicious warmed up or straight out of the fridge cold and can be prepped in advance, which makes for a lot less hassle in the morning!
Overnight oat recipes have been popping up all over the place and this one is PERFECT for fall! Autumn really is the season of the Pumpkin and I totally get it! It’s sooo yummy and can be made into so many things! The idea behind overnight oats is simple: you add your oats and other ingredients into a container (mason jars work great!) stir, and let them sit overnight. The oats absorb the liquids and soften so you can eat them uncooked, leaving you with a quick and delicious meal you can enjoy right out of the jar!
These overnight oats taste amazing and I actually stay full all morning long. Everything was pretty easy to find, either at the bulk store or grocery store and the prep time was minimal. It’s also super easy to customize and you can add more or less of your favourite ingredients or substitute others if you prefer. This is such a tasty and easy way to enjoy oatmeal!
My love for overnight oats started after I had my 3rd baby. I was searching for super easy and quick breakfast ideas and found this yummy recipe: Super Healthy Overnight Oats. It was SO good I ate it almost every morning for longer than I’d like to admit! I love eating them cold! It’s just like cereal except better.
I’ve been making different variations of overnight oats for a few years now. There are SO many ways to make them. It’s incredibly simple and honestly, I LOVE being able to just grab it and go in the mornings! With 3 young kids running around, every minute counts! It’s such a relief to know I have pre-made, healthy options in my fridge ready to go. These meals also last up to 5 days in the fridge so you can meal prep your breakfasts for the entire week!
I was inspired by the awesome recipe over at Amy’s Healthy Baking. I had hearts in my eyes from the moment I saw it and I knew I had to try it for myself!

Pumpkin Pie Overnight Oats:
The full printable recipe is at the end of this post, but here’s what you’ll need:
- Old Fashioned Oats
- Yogurt (plain, vanilla or greek for extra protein)
- Pumpkin Puree
- Pecans
- Maple Syrup
- Pumpkin Pie Spice
- Mason Jars
You can make yourself 4 or 5 jars of overnight oats in about 15 minutes. Things start to taste a bit soggy after 5 days, so I don’t particularly recommend storing these for much longer than that, but you can test it for yourself and see how it goes!
I’d recommend using a 2 cup mason jar for this recipe.
You can pour your pumpkin pie overnight oats into a bowl if you like, or you can eat them straight out of the jar. I kind of like eating out of mason jars!? It’s just so easy! And if you don’t finish, you can just pop the lid back on and put it back in the fridge to finish later.
If you like your oats to have a softer, creamier consistency, you can add a tablespoon or two of milk. It really depends on your preference!
I used Greek yogurt for the extra protein, but next time I’m going to try them with vanilla yogurt. The vanilla will add a ton of awesome flavour!
For the best texture, I would recommend leaving them in the refrigerator overnight, but if you’re in a pinch, you can eat them right away too.
Add all the ingredients to the jar and stir them together! Now you can pop it in the fridge and forget about it until the next morning!
You’ll be so happy when you wake up and remember your breakfast is ready to go! Eat it while you’re getting ready. Or pop it into your purse. It’s super portable!
Pumpkin Pie Overnight Oats
Ingredients
- 1/2 cup yogurt plain, vanilla or greek will work
- 1/4 cup pumpkin puree
- 1/2 cup old fashioned oats
- 1 Tablespoon maple syrup
- 2 Tablespoons chopped pecans
- 1/2 teaspoon pumpkin pie spice
Instructions
- Add all ingredients to a 2 cup mason jar and mix well.
- Cover with the lid and keep in the fridge overnight. The jars can be stored for up to 5 days.
- Enjoy your yummy, hassle-free breakfast in the morning!
