Hello again! It’s Alicia from The Baker Upstairs, and I’m excited to share another tasty recipe with you today. This lemon blueberry bread is so delicious and perfect for spring! It’s loaded with juicy blueberries, and has a perfect sweet lemon flavor that will make everyone ask for seconds.
Who else is in the middle of spring cleaning right now? This time of year is perfect for giving the whole house a little facelift, and getting rid of things we don’t need. After buying our first home last summer, my husband and I made a long to-do list of house projects, and during the last month or so, we’ve crossed a lot of things off our list. They’re not especially expensive or difficult projects to accomplish, but they are things that make it feel like our home. For example, I painted our front door a pretty greenish-blue color, and now every time I come home, it makes me smile to see our happy little door.
We’ve also completed projects like finally hanging some art in our girls’ bedroom, hanging up shelving in the dining room, and clearing out clutter in our living room so it feels more open and spacious. Everywhere in the house is feeling brighter and fresher, and I love it! With all the focus on house projects, though, I haven’t baked anything in several weeks. My kids are definitely feeling the lack! They’ve been asking for dessert pretty much nightly, and they don’t really seem to be contented with a piece of fruit instead of a yummy baked good. I whipped up a batch of this lemon blueberry bread for them the other night, and my whole family loved it! It’s quick and easy to make, so it’s perfect for a busy day, and it tastes absolutely heavenly.
I got the recipe for this delightful bread from Pinch of Yum, but made a few little changes. Several years ago, I learned a little secret for awesome lemon flavor in baked goods. Just rub the lemon zest into the sugar with your fingers until it’s fragrant, then add the other ingredients. Rubbing the zest releases the citrus oils, which gives your dessert a better lemon flavor (and it smells amazing, too!).
Lemon Blueberry Bread
The full recipe is at the bottom of this post, but here’s what you’ll need:
- sugar
- lemon
- butter
- eggs
- flour
- salt
- baking powder
- milk
- blueberries
I made my bread in my stand mixer, but you could easily mix it with a hand mixer, or even by hand. I really love the flavor of fresh blueberries in this bread, but you could substitute frozen blueberries if fresh aren’t available. If you’re using frozen blueberries, don’t thaw them before adding them to the batter.
Lining the baking tin with parchment makes it so easy to lift the finished bread out, so none of those yummy crust pieces are left behind. It’s my favorite trick for a pretty loaf!
My bread took close to 70 minutes to bake all the way, but it will depend on your particular oven and the type of bread pan you use. The bread should be golden brown on top when it’s done. For the best looking slices, be sure to let the bread cool completely before slicing it. I promise it’s worth the wait!
This lemon blueberry bread is sweet enough for dessert, but it’s also delicious for breakfast or snacking. My kids absolutely loved it when I added a little slice of it to their lunchboxes. It will keep for several days if wrapped tightly and stored in the fridge.

Lemon Blueberry Bread
Ingredients
- 1 cup sugar
- zest and juice of one lemon
- 1/2 cup butter softened
- 2 eggs
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 1/2 cups fresh blueberries
Instructions
- Preheat the oven to 350. Line a loaf pan with parchment and spray with cooking spray.
- In a large mixing bowl, combine the sugar and lemon zest. Rub the zest into the sugar with your fingers until fragrant. Add the butter, lemon juice, and eggs, and mix until combined.
- Next, add the flour, baking powder, salt, and milk to the bowl, and mix until combined. Gently fold in the blueberries.
- Pour the batter into the prepared pan and bake 60-70 minutes, or until a toothpick inserted in the center comes out clean and the loaf is golden brown on top. Remove and let cool before slicing.
