These easy baked potato skins are SO GOOD. They make a great appetizer, a fun side dish with dinner or a simple game day snack. Serve them with your favourite baked potato toppings.


They’re also really simple to make!! Is there anything better than cheesy-bacon-sour-cream-and-potato goodness!? Nope!


This recipe is such a huge time saver. Rather than baking the potatoes, scooping them out and baking them again, you can pretty much cut the baking time in half by cutting the potatoes into slices instead. It’s a bit of a twist on regular potato skins I suppose, but they’re equally delicious!


And when I can make something delicious in half the amount of time and STILL impress my guests or family, then I am totally on board. These baked potato skins were delicious!

We eat a lot of roasted potatoes with our meals. I’m just too lazy to peel potatoes, so I love recipes where I can leave the skins on my potatoes. Baked potatoes, potato wedges, fresh potato fries, and now these loaded baked potato bites. They’re easy and sooooo good!


This is such a simple recipe, and it always turns out really well. I was inspired by the recipes over at I Heart Naptime, Blogghetti and Budget Savvy Diva. So good!


How to Make Easy Potato Skins


The full printable recipe is at the end of this post, but here’s what you’ll need:



  • Potatoes

  • Cheese

  • Bacon

  • Green Onions

  • Sour Cream

  • Cooking Oil


Parchment paper is my favourite cooking tool ever. It’s seriously amazing. If you cook with aluminum foil, things will stick to it. But if you cook with parchment paper, your food comes off of it with no troubles at all. You don’t even need to spray it! Just cover your baking sheet with parchment paper and when you’re done the clean up is SO EASY!


Wash the potatoes, then cut them into 1/2 inch slices. Brush both sides of the potatoes with cooking oil. Then sprinkle them with a little salt.



Bake them for 15 minutes at 400F then flip them over. When you flip them over, they should be nice and golden on the bottoms.


On a side note, you can also roast sweet potatoes using this same cooking method. Except we eat our sweet potatoes without any toppings. I don’t know… do other people eat toppings on their sweet potatoes? We just slice them, sprinkle them with salt (sometimes rosemary…), bake them and eat them just like this.



After you flip them, continue baking the potatoes for another 15 minutes. Then pull them out and sprinkle them with grated cheddar cheese.


The cheese melted before I could take the photo, but you get the idea.



Finally, sprinkle them with a little bit of bacon. Return the pan to the oven and cook them for another 5 minutes. Just long enough to melt that cheese and crisp up the bacon a little bit.



We go through a LOT of sour cream in our house!? I’m pretty sure sour cream might be my favourite topping.

You can sprinkle green onions on top, or chives, or jalapenos. Whatever you like on top of your baked potatoes works great here!

Ingredients

  • 2 - 3 large russet potatoes
  • 1/2 cup cheddar cheese grated
  • 1/4 cup bacon bits
  • 2 tablespoons cooking oil
  • salt
  • chopped green onions
  • sour cream

Instructions

  • Preheat the oven to 425F. Line a baking sheet with parchment paper.
  • Cut the potatoes into 1/2 inch thick slices.
  • Brush both sides of the potato slices with cooking oil, then place them on the baking sheet. Sprinkle with salt.
  • Bake the potato slices for 15 minutes. Flip them over and continue baking for another 15 minutes or until they are cooked through and slightly browned.
  • Remove the potatoes from the oven and sprinkle with the cheddar cheese. Then sprinkle with the bacon bits.
  • Return to the oven for another 5 minutes.
  • Serve with sour cream and chopped green onions.
