Hello again! It’s Alicia from The Baker Upstairs, and I have a tasty and sweet breakfast recipe to share with you today. These cinnamon apple muffins are totally delicious, and they’re also perfect for fall! They’re light and tender, and have such a delicious combination of flavors. Best of all, they are so quick and easy to make that you can have them on the table in less than 30 minutes!


It’s that weird time of year right now where I feel torn between summer and fall. On the one hand, I’m pretty ready for my kids to start school so I can get organized again and have a few hours to myself every day. On the other hand, it’s hard to say goodbye to those lazy summer days and warm evenings dining outside on the patio. In terms of my menu, I’m starting to shift gears towards soups and casseroles, and away from summer salads and cooking everything on the grill. I am pretty excited about all of the fall flavors that are coming up! I’m looking forward to enjoying pumpkin and apple everything all through the season. I mean, I know that I can enjoy those flavors any time of year, but it feels all the more special to enjoy them during the fall!


These cinnamon apple muffins are the perfect way to enjoy one of my favorite fall flavor combinations! They’re simple and delicious, and not overly sweet. They’re also made with ingredients I always have on hand, so they’re a great choice for any day when I feel like a little treat. Give them a try, and you’ll love them as much as I do!

Cinnamon Apple Muffins


The full recipe is at the bottom of this post, but here’s what you’ll need:



  • brown sugar

  • flour

  • baking powder

  • cinnamon

  • salt

  • eggs

  • oil

  • buttermilk

  • apple



These muffins are so simple and delicious, and take just a few minutes to mix together. I would definitely recommend using a flavorful variety of apple to give the muffins a boost of apple flavor. My favorite apples to use for these muffins are jazz apples, granny smith, or honeycrisp. If you use a more mild apple, like a gala or red delicious, you’ll have less of that sweet apple flavor in the finished muffins.



Once the batter’s all mixed together, scoop it into a lined muffin tin, filling the cups 3/4 of the way full. I used an ice cream scoop for measuring, and it worked like a charm. It’s a good idea to scoop and bake the batter quickly after it’s mixed, or the apples will start to dissolve and the batter will get runny.



Bake the muffins until they’re domed on top and light golden brown around the edges. The tops should spring back when they are touched lightly. Let the muffins cool in the pan for a few minutes, then move them to a cooling rack to cool completely.



These muffins are so light and tender, and the addition of apple makes them extra moist and delicious. The cinnamon adds the perfect touch! These muffins are best when they’re just slightly warm from the oven, and I love that they are so soft. They taste amazing with a little dollop of butter on top, and maybe a drizzle of honey also if you’re craving something sweet. They will keep for 2-3 days if stored in an airtight container, but I think they’re at their very best on the first day.

Cinnamon Apple Muffins

Ingredients

  • 1/2 cup brown sugar
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup oil
  • 2 eggs
  • 2/3 cup buttermilk
  • 1 medium apple peeled and grated

Instructions

  • Preheat the oven to 400. Line a 12 cup muffin tin with paper liners or spray with cooking spray.
  • In a large bowl, whisk together the brown sugar, flour, baking powder, cinnamon, and salt. In a small bowl or measuring cup, whisk together the oil, eggs, buttermilk, and vanilla. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the grated apple.
  • Scoop the batter into the prepared muffin tin, filling 3/4 full. Sprinkle the coarse sugar over the tops of the muffins. Bake 15-20 minutes, or until lightly browned on top.
