Chocolate Chip Banana Muffins

Hello again! It’s Alicia from The Baker Upstairs, and I have a super delicious recipe to share with you today! These chocolate chip banana muffins are one of my family’s favorite recipes. They’re super quick and easy to make, incredibly delicious, and perfect for breakfast, after school snacks, or late night treats.


This last week, I had one of those colds that just knocks you down. Since we moved to a new state last summer, I think we as a family have caught every single illness that has rolled through either of my kids’ classes. It’s like we’re rebuilding our immunity from scratch! Usually I’m able to push through and keep things moving, with all of our daily obligations, but the cold last week really took me down. I could hardly move from the couch for two solid days, and couldn’t do much more than just lie there limply, while my kids got into all kinds of mischief around me. My husband was a champ and helped by picking up dinner and wrangling the kids so I could rest as much as possible.


On the third day, I finally mustered up the energy to take a shower and change out of my pajamas, and it was glorious. Once I was feeling a little more like myself, the first thing that came to mind was that I needed to bake something! It needed to be something easy, and something I already had all of the ingredients on hand to make, so these chocolate chip banana muffins were perfect. In about thirty minutes, I had a pan full of hot, tasty muffins, all ready for my kids and I to dig in. My six year old took a big bite of muffin, turned to me and said, “Don’t get sick again, Mommy. I miss your treats!” It’s good to know there’s something my kids like about me, I guess. 🙂

I adapted these muffins from my very favorite bakery style blueberry muffins. It’s the best muffin recipe I’ve ever found, and it always comes through for me. These muffins are extra delicious with the added moisture from the banana and the gooey chocolate chips. I love that they’re made with ingredients I always have on hand, so I can easily mix up a batch whenever the mood strikes!


Chocolate Chip Banana Muffins


The full recipe is at the bottom of this post, but here’s what you’ll need:



  • flour

  • sugar

  • salt

  • baking powder

  • milk

  • oil

  • egg

  • banana

  • chocolate chips

The muffin batter is simple and quick to mix up, and you don’t even need a mixer! Just whisk together the dry ingredients, add the wet ingredients, then stir just until the batter comes together. Add your chocolate chips, and you’re all set!

I like to add a few extra chocolate chips on top of each muffin before they bake. They make the muffins even prettier, and who doesn’t love a little extra chocolate? I used semi-sweet chocolate chips for these muffins, but I think they’d be great with milk chocolate chips, butterscotch chips, or even cinnamon chips.

The muffins come out of the oven golden brown and beautiful, and they smell totally amazing! I’m not sure there’s a better smell than banana bread baking. Yum!

As great as they are right out of the oven, these muffins also freeze really well. I like to make a double batch and keep them in the freezer for lunch boxes and after school snacks. I just reheat them in the microwave for a minute or so when we’re ready to eat, and they taste just as great as they did when they were freshly baked.

Chocolate Chip Banana Muffins

Servings: 12 muffins

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup oil
  • 1 egg
  • 1/3 cup milk
  • 1 ripe banana mashed
  • 3/4 cup chocolate chips

Instructions

  • Preheat the oven to 400. Spray a muffin tin with cooking spray, or line with paper liners.
  • In a medium bowl, whisk together the flour, sugar, salt, and baking powder. In a small bowl, combine the oil, egg, milk, and banana. Pour the wet ingredients into the dry ingredients, and mix until just combined.
  • Stir in the chocolate chips. Scoop the batter into the prepared muffin tin, filling nearly to the top. Sprinkle a few additional chocolate chips on the top of each muffin. Bake 15-20 minutes, or until lightly browned.
