Brownie Cookies – Rich and Fudgy!

Hello again! It’s Alicia from The Baker Upstairs, and I have another super tasty sweet treat to share with you. These rich and fudgy brownie cookies have all the deliciousness of a brownie, but in cookie form. They are a chocolate lover’s dream!


After a long and gloomy winter, it seems that spring has finally sprung at my house, and I could not be happier about it! We’ve had a full week of sunshine and warm temperatures, and all of the flowers in my yard are blooming. Since it’s our first year in this house, I really had no idea what to expect as far as which flowers might be popping up, but so far we’ve had tulips, daffodils, and bunches of sweet little crocuses. The bees are buzzing around, the hummingbirds are stopping by my feeder, and it finally feels like the long winter is over!


One thing I think that I will actually miss about winter is all of the baking I’ve been doing during the cold winter days. I’m not ready to let go of the cookies quite yet! A few days ago I was craving something sweet, but couldn’t decide between baking up some brownies or making cookies (I know, it is such a tough choice!). I hopped on Pinterest, and discovered to my delight… brownie cookies! What in the world could be better than that? All the goodness of two of my favorite desserts, in one sweet little package. I got right to work making them, and they turned out totally delicious. They were the perfect way to satisfy my craving for something sweet and chocolatey!

I originally found this recipe on Cafe Delites, but I tweaked it just a little bit to suit my tastes. They turned out so delicious, and I will definitely be making them again and again!


Brownie Cookies


The full recipe is at the bottom of this post, but here’s what you’ll need:



  • cocoa powder

  • sugar

  • butter

  • egg

  • vanilla

  • flour

  • baking powder

  • salt

  • chocolate chips

One of the (many) great things about these chocolate brownie cookies is that they’re made in one bowl, so there’s only one dish to wash when you’re finished! I always like to line my baking sheets with parchment paper or silicone liners, which means I don’t have to wash them, either. Any little trick that gives me less dishes to wash is a win in my book!

These cookies don’t spread very much as they bake, so it’s okay to space them fairly closely (about one inch apart) on the baking sheet. Bake the cookies for 12 minutes, then remove them from the oven and let them cool on the baking sheet for 5-10 minutes before you move them to a cooling rack. The cookies will be very soft when they’re removed from the oven, but will firm up a little as they cool.

Servings: 2 dozen

Ingredients

  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup butter melted
  • 1 egg
  • 2 teaspoons vanilla
  • 1 1/3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350. Line two baking sheets with parchment or silicone liners.
  • In a large bowl, whisk together the cocoa powder, sugar, and melted butter. Add the egg and vanilla and mix until well combined. Add the flour, baking powder, and salt, and mix until the dough comes together. Stir in the chocolate chips.
  • Scoop the dough into one inch balls and place on the prepared baking sheets. Bake 12 minutes, then remove from the oven and let rest 5-10 minutes on the baking sheet before removing to a cooling rack.
