Hello again! It’s Alicia from The Baker Upstairs, and I have a totally delicious breakfast recipe to share with you. This blueberry almond granola is so easy to make at home, and tastes way better than store-bought. It’s crisp and chewy, with a delicious combination of flavors and textures. It’s the perfect way to start the day!
If there’s one recipe that I’ve tried again and again to make, and had failure after failure, it’s granola. It seems like it should be simple to make, but I’ve tried so many recipes that have turned out just plain awful! What makes it even worse is that a lot of granola recipes call for huge amounts of ingredients (I think I made one once that had 12 cups of oats in it!), and so when the recipe doesn’t turn out well, it’s a huge disappointment and a waste of money. I had more or less given up on finding a good recipe, since I had tried so many duds, and then I stumbled across the absolutely delicious recipe I’m sharing below.
This granola is incredibly easy (and quick!) to make, and it has a much better flavor than any other granola I’ve tried. The combination of honey and brown sugar is super delicious, and adds the perfect amount of sweetness. As far as add-ins, you can mix and match to suit your own tastes, but we absolutely love this blueberry and almond version. We’ve also had great results adding in coconut, dried cranberries, raisins, chopped pecans, walnuts – you name it!
I originally found this recipe on I Heart Naptime, but decided to change up the flavors a little bit to feature blueberries and almonds. I found my dried blueberries at the grocery store near the raisins. They add such a great flavor to the granola and make it extra special. This granola is so good!
Blueberry Almond Granola
The full recipe is at the bottom of this post, but here’s what you’ll need:
- old fashioned oats
- canola oil
- honey
- brown sugar
- salt
- vanilla
- dried blueberries
- sliced almonds
One of the things that makes this granola recipe so simple and easy to make is that you can just mix all of the ingredients together in the same bowl! A lot of granola recipes I’ve seen instruct you to combine the oil and honey, bring it to a boil, and then mix it with the oats and other toppings. This recipe is much simpler and quicker to make, and since it doesn’t involve the stovetop at all, my kids love to help. They can do almost the whole process themselves, with me helping with the oven parts, and it’s one of their favorite snacks to make.
Once it’s all mixed together, spread it in an even layer on a baking sheet, and bake it at 300 degrees. About halfway through the baking time, give it a good stir to help it cook evenly.
The granola will still be a little sticky when it comes out of the oven, but after it cools it will be crispy and crunchy. Be sure to watch it carefully in the last few minutes of cooking time to ensure that it doesn’t burn.
Let the granola cool completely, then store it in an airtight container. If it’s still a little chewy after it has cooled completely, you can pop it back in a 300 degree oven for another 10 minutes or so to dry it out a little.
This blueberry almond granola is equally delicious as a yogurt topping, or eaten as cereal with milk. It’s also great just for snacking! My kids love to bring it on our nature walks and munch on it as we go. The combination of blueberries and almonds is so delicious, and they taste amazing in combination with the sweet and crunchy granola. This homemade granola is a breakfast staple!
Blueberry Almond Granola
Ingredients
- 5 cups old fashioned oats
- 2/3 cup canola oil
- 1/2 cup honey
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/4 cup brown sugar
- 1 cup dried blueberries
- 3/4 cup sliced almonds
Instructions
- Preheat the oven to 300. Line a baking sheet with parchment or foil.
- In a large bowl, mix together the oats, canola oil, honey, vanilla, salt, and brown sugar, until well blended. Add the blueberries and almonds, and mix to combine.
- Spread the granola in an even layer on the prepared pan. Bake 15 minutes, then remove the pan from the oven and mix the granola. Return the pan to the oven and bake an additional 15 minutes.
- Allow the granola to cool completely, then store in an airtight container.
This delicious and crisp blueberry almond granola is so easy to make at home, and incredibly delicious! It makes a fantastic breakfast or snack!
