Hello again! It’s Alicia from The Baker Upstairs, and I have a totally fantastic summer treat to share with you today! These berry lemonade freezer pops are cool and refreshing, have the most delicious flavor, and are super easy to make. They’re perfect for enjoying all summer long!
My kids are finally out of school this week, and I have to confess that I’ve been a little nervous about it. Usually I have time to plan ahead and figure out some fun activities for them, to keep them occupied and maintain all of our sanity. This year, though, we are in the process of purchasing a home. It’s pretty much all I can do to keep them fed and clothed at the moment. I have no mental energy left for thinking up fun activities!
It occurred to me, though, that my soon-to-be middle schooler is old and clever enough to think up some fun ideas on her own, so I have appointed her to be my helper over the summer. Every day she’ll be responsible for entertaining her little sister for a few hours so that I can stay on top of things (or maybe just have a minute to sit down and relax by myself). So far she’s come up with some really fun plans, like making slime together, playing school, doing a book club, and working together on some easy cooking projects.
Our homemade freezer pops were a big hit last year, and the kids are excited to make some fun new variations this year. I love that they are easy enough that the kids can make them all by themselves. These berry lemonade freezer pops are one of our favorite variations, and I’m sure we’ll make them many times this summer!
Berry Lemonade Freezer Pops
The full recipe is a the bottom of this post, but here’s what you’ll need:
- frozen berries
- lemonade
- sugar
This recipe could not be easier to make! Just add all three ingredients to a blender, then blend until smooth. I like to use the smoothie function on my Blendtec, so everything is blended up nice and smooth. I added about 1/4 cup sugar to my freezer pops because 1) we all have a major sweet tooth in my house, and 2) my lemonade was pretty tart, but you can add more or less to suit your tastes. If you’re concerned about sugar, you could even leave it out completely.
My kids tend to complain about blackberry seeds, so I strained my freezer pop mixture before I put it into the freezer pop bags. (If you don’t mind the texture being a little grittier, you can totally skip this step.) I used a fine mesh strainer, and just pushed the liquid through using a spatula. It only took a minute or two, and made for very smooth popsicles.
Once the mixture is strained, add it to your freezer pop bags using a funnel. I found mine on Amazon and there are several good varieties there, both disposable and reusable. If you don’t want to use freezer pop bags, you could easily use any other popsicle mold. My kids love the freezer pop bags because it’s easy to push the popsicle up, and I love that the mess is pretty minimal.
Freeze the popsicles until firm, and then enjoy! They’ll keep in the freezer for quite a while – my kids recently dug out some that I made several months ago, and said they were still very tasty. They have a delicious sweet and tart flavor, and the combination of berries and lemons is totally delicious. They’re perfect for cooling down on a hot day!
These berry lemonade freezer pops are so easy to make, and they would be a perfect summer cooking project to do with the kids! You can easily swap in other frozen fruits to make different flavor combinations, and experiment with different liquids as well. We’ve made these with apple juice, coconut milk, soy milk, and lemon-lime soda, and they’ve always turned out well. They’re so fun to make and so versatile, too!
Berry Lemonade Freezer Pops
Ingredients
- 1 1/2 cups frozen berries
- 2 cups lemonade
- 1/4 cup sugar more or less to taste
Instructions
- Add all ingredients to a blender or food processor, and blend until smooth.
- Pour the mixture through a fine mesh strainer, squeezing out as much liquid as possible with a spatula.
- Using a funnel, fill ice pop molds to fill line (or use popsicle molds of your choice). Freeze 2-3 hours, or until firm.
These berry lemonade freezer pops are so sweet and refreshing, and perfect for cooling off on a hot summer day. They’re so easy to make, and have only three ingredients!
