Every year I both look forward to and dread summer time. On the one hand, I love that things are more carefree and easy. The kids are out of school, and we don’t have to wake up early or stick to a strict schedule. There’s time to explore, to take things slow, and we don’t have as many little things to worry about. On the other hand, I’ve never been very heat-tolerant, and I hate that every day it’s so hot that I just want to climb into the refrigerator with a cold Diet Coke and never come out. We’re lucky to have air conditioning (most of the homes in our area don’t have it), but even with the air conditioner going, the top floor of our house is uncomfortably warm in the late afternoon and evening hours.


Since our kitchen is unfortunately on the upper floor, it makes me very reluctant to want to cook anything when it’s so hot. I tend to rely a lot on my slow cooker and Instant Pot for cooking meals, since they’re easy to use, and don’t heat up the whole house. When it comes to side dishes, though, we usually just stick to fresh fruits and vegetables. They’re in abundance during the summer, and I love how bright and fresh everything is. This watermelon berry salad is one of our favorite ways to enjoy the summer fruit, and I love that we can have a delicious side dish without heating up my already-too-warm kitchen. It takes just a few minutes to make, and it’s the perfect complement to any summer meal!

My kids actually like it better that way, though! As it sits, the fruit will release some of its juices, and my kids love to drink the juice from the bottom of their fruit salad bowls.

Ingredients

  • 4 cups cubed watermelon
  • 2 cups fresh blueberries
  • 2 cups strawberries chopped
  • zest of one lime
  • juice of one lime
  • 2 tablespoons honey

Instructions
