Other people stress about what to wear each day. Or about picking fabric samples for curtains (well… that would actually stress me out too…). But apparently I’m the type of person who stresses about what type of candy to put into my Chex mix. I went to the bulk store and bought way too many different choices. And then I filled little bowls, sat on the floor with my group of bowls and kept refilling and rearranging them to figure out which combinations would look and taste the best together. I might be a little neurotic, but I’m very happy with how it all turned out. lol


To give you some perspective on my priorities, I’m wearing the same turtleneck and jeans that I wore yesterday… (Shhhhhh!!!) I work from home so the only people that I see every day, other than my husband and kids, are the other parents at pick up time at school, and my jacket covers my clothes… (Let’s pretend I didn’t just tell you that, okay? haha) Ironically, I did 6 loads of laundry yesterday, but none of it was mine. Isn’t that how it always goes?!


Anyway, I lovingly made all my ingredient choices, mixed the cereal part together and put it into the oven. You need to stir the mixture every 15 minutes or so as it bakes – which is fine and dandy – but JUST after I put this lovely mixture into the oven, I got a phonecall from the school to come pick up my 4 year old who apparently felt sick. DOH! I hopped into the minivan, rushed to school, signed her out, hurried her back home and AMAZINGLY I made it back to my kitchen with 2 minutes to spare before I had to stir. Wow, am I ever loving how close we live to the school!!

My daughter ended up feeling better about 25 minutes after she got home… or really, as soon as she noticed the bowls of candy sitting on the counter for this recipe. Isn’t it funny how the sight of three bowls of candy magically made her stomach feel better?? Ha!


Don’t get me wrong, it’s definitely better than her actually being sick… but she’s the one who gets bored with TV after 15 minutes and spends the rest of the afternoon at my side asking to help. So I didn’t get nearly as much work done as I planned. But, oh, you’ve gotta love her!

So remember when I made that Harvest Hash Chex Mix, back in the fall. We loved it. I’ve been waaaaaiting for spring to come so I could do a version of it for Easter. The pastel colours are so pretty and so fun!! And there are sooooo many fun choices for goodies to add into it!


I do a lot of my treat shopping at the bulk store. They always have so many fun treats to choose from and I love that you can buy exactly 1 cup of Reese’s Pieces Eggs if you need them. It makes recipes like this a lot easier!

I ended up using a mixture of Rice Chex cereal, pretzels, peanuts (roasted and unsalted), and Cheerios. Combine it all in a large bowl.


You don’t have to line them up in pretty lines. That’s just so you can easily see what’s in the bowl in the photos.

I had a hard time finding the pastel candy corn in Canada. I had to buy it online and have it shipped across the country (at a ridiculous fee, I might add…). I’m pretty sure it’s more common in the United States? Even if you can’t find it in stores, there’s a link above for where you can get it on Amazon. American Amazon. Because that would have been too simple if I could get it on Canadian Amazon.

The best part of this recipe is that all you have to do to make the sauce is microwave it. No pots to clean up! Then drizzle the buttery, delicious goodness over your cereal and nut mixture and toss it gently until it’s well coated.

Spread the mixture out in two large baking sheets lined with parchment paper and bake per the instructions in the recipe at the end of this post. (I’ll keep my fingers crossed for you that you don’t get any urgent calls from the school while it bakes.)

Once the mixture cools, transfer it to a large bowl and gently stir in the candy.

I think my favourite part is the Reese’s eggs. Which is also my 7 year old’s favourite part. I just went to get myself a bowl of my spring snack Chex mix and my oldest daughter has already picked out all the Reese eggs. Ha! Little rascal. Little does she know that I still have leftover Reese’s eggs hidden up in my office. Shhhhh…

Ingredients

For the Sauce:

  • 1/2 cup Butter melted
  • 1/2 cup Brown Sugar packed
  • 1.5 Tablespoons Vanilla Extract

For the Mix:

  • 6 cups Rice Chex Cereal
  • 4 cups Cheerios
  • 4 cups Pretzels
  • 2 cups Peanuts roasted, unsalted
  • 1 cup Pastel Candy Corn
  • 1 cup Easter M&M's
  • 1 cup Reese's Pieces Eggs

Instructions

  • Preheat the oven to 275°F.
  • Melt the butter in the microwave in medium bowl or measuring cup.
  • Add the brown sugar and vanilla extract and whisk well until combined and dissolved.
  • In a large bowl, add the Chex cereal, Cheerios, pretzels and peanuts.
  • Pour the sauce over the cereal and nut mixture and toss gently until evenly coated.
  • Line two large baking sheets with parchment paper.
  • Divide the mixture onto the two baking sheets and spread in even layers.
  • Bake for 45 minutes, stirring every 15 minutes.
  • Remove from the oven and allow it to cool. Then add it to a large bowl, along with the candy corn, M&M's and Reese's eggs. Toss to combine.
  • Store in airtight container.
