Hello again! It’s Alicia from The Baker Upstairs, and I have the most awesome summer recipe to share with you today! These mango coconut freezer pops are so simple to make (only three ingredients!) and so refreshing and delicious. They are the perfect easy treat to enjoy all summer long!


I know a lot of kids have been out of school for weeks now, but my kids have only been out for about a week and a half. We had a multitude of snow days during the winter, which extended our school year by more than a week (ugh!). I have been really excited to have the kids home for summer break, but now that they’re actually home, they can be a little overwhelming. 🙂 I adore them, of course, but I have really grown accustomed to having a quiet house all to myself during the day! I’m still learning to cope with all the noise and mess that accompanies having them home during the day.


As I mentioned a few weeks ago in this post, we’re doing a summer camp at home, and I’m really excited to teach them some of my mad skills. We’ve been doing a lot of cooking and baking together so far, and it has been so fun to share some of my favorite activities with them. So far we’ve made a few batches of cookies, this cherry and peach crisp, and some chocolate cupcakes. My younger daughter has been dying to try making popsicles, and these mango coconut freezer pops were the perfect starter recipe!


My six year old was able to do the whole process more or less by herself, although I did help with the pouring. She added the ingredients to the blender, blended them up, tasted our mixture to make sure it was delicious, and helped me seal all the freezer pop bags. I love that they’re so quick to make, and don’t require any cooking. It’s so nice to have a summer dessert that doesn’t require heating up the house!

These freezer pops are very allergy-friendly (assuming you use a fruit you’re not allergic to), and are dairy-free, nut-free, soy-free, and gluten-free. They taste fantastic, too! If you want to make them a little healthier, you could leave out the sugar or use agave or stevia instead. My sweet tooth and I were pretty happy with the level of sweetness, though. 🙂

The full recipe is at the bottom of this post, but here’s what you’ll need:



  • frozen mango chunks

  • coconut milk

  • sugar

This recipe is so incredibly simple! You’ll just add all of the ingredients to a blender, and blend until smooth. I would suggest adding a tablespoon of sugar, then tasting, and adding more sugar if desired. My kids have a sweet tooth (just like their mom!) so we ended up adding the full three tablespoons, but if you are more reasonable than we are, less sugar would probably suffice. 🙂

I bought these freezer pop zipper bags on Amazon, and I have been pretty impressed by how sturdy they are. I’ve also seen these reusable silicone freezer pop molds that look great too! You could also use regular popsicle molds if you don’t have any freezer pop bags on hand. I used a small funnel to fill the bags, and it worked like a charm, with no mess. Fill the bags to the fill line, seal, and lay them all in a single layer on a baking sheet to freeze.

After 2-3 hours, you’ll have these awesome homemade freezer pops! They’re just as fun as the freezer pops you loved as a child, except they’re way healthier and more delicious. They slide out of the bags pretty easily, which makes them easy to eat with minimal mess. I’ve found it helpful to open the bag and then start squeezing at the very bottom of the freezer pop. They slide right out!

It has been so hot around here for the last few weeks that my kids have been asking for popsicles on the daily. We will definitely keep a stash of these in the freezer all through the summer! They’re so sweet and flavorful, and I love the creaminess from the coconut milk. I think these freezer pops would work great with any kind of frozen fruit… I’m excited to try them with strawberries and raspberries too!

Servings: 10 pops

Ingredients

  • 12 ounces frozen mango chunks
  • 1 can around 14 oz coconut milk
  • 2-3 tablespoons sugar add more or less to taste

Instructions

  • Add all ingredients to a blender and blend until smooth.
  • Pour the mixture into freezer pop bags or popsicle molds, and freeze 2-3 hours, until firm. Store in the freezer.
