These simple and delicious ice cream sandwiches have just three ingredients, and are so easy even the little ones can make them. They’re the perfect treat to enjoy on a hot day, and so sweet and refreshing!
I’m the second of five kids in my family, and growing up my parents didn’t have a lot of extra money. Eating out was a rarity, usually only a few times a year for birthdays or special occasions, and we almost never ate any fast food. During the summer, the local ice cream shop always ran a special deal. I could buy either an ice cream cone or an ice cream sandwich for a quarter, which made it pretty affordable for my meager budget. I earned a little money here and there babysitting or pulling weeds for neighbors, and it was so fun to be able to bike down to the ice cream shop and buy my own frozen treat.
My siblings and I visited at least once a week all summer long, and those trips to the ice cream shop are some of my favorite memories from childhood. As tempting as their ice cream cones were, I ended up choosing an ice cream sandwich about 90% of the time. They’re still one of my favorite treats, even now as an adult. There’s just something special about two cookies with ice cream between them. They’re fun to eat, and they’re also fun to make at home!
These super easy ice cream sandwiches are one of my younger daughter’s favorite treats to make. She loves that she can make them all by herself! She’s had a major independent streak lately, so it’s been fun to hand the reigns over to her and let her make dessert for all of us. We’ve been making these sandwiches every summer for several years now, and I love that I’m creating a new tradition of summer ice cream sandwiches with my own kids. They are so good!
Easy Ice Cream Sandwiches
The full recipe is at the bottom of this post, but here’s what you’ll need:
- vanilla ice cream
- chocolate chip cookies
- sprinkles
I love that there are only three ingredients in these sweet little sandwiches! My family really likes to make them with Chips Ahoy cookies, but they would be delicious with just about any store-bought cookie. If you’re feeling extra ambitious, you could definitely make them with homemade cookies instead. These red velvet chocolate chip cookies, oatmeal raisin cookies, or sprinkle sugar cookies would all be good choices.
You’ll want your ice cream to be just slightly softened, so it’s easy to scoop, but not so soft that it melts everywhere before you can put the sandwiches back in the freezer to firm up. I love classic vanilla, but of course you can easily sub in any flavor of ice cream you like. The flavor combinations are endless!
Once your sandwiches are assembled, roll the sides in sprinkles for a fun and festive touch. Be sure to work quickly so the sprinkles don’t have time to melt into the ice cream. Once all of the ice cream sandwiches have sprinkles, put them in the freezer so they can firm up before serving.
These ice cream sandwiches will keep well in the freezer for several weeks if stored in an airtight container. They’re great to make ahead for summer parties! The recipe below will make six sandwiches, but you can easily adapt it to make as many or as few as you need.

Ice Cream Sandwiches - Easy and Delicious
Ingredients
- 12 chocolate chip cookies
- 1 1/2 cups vanilla ice cream
- 1/2 cup sprinkles
Instructions
- Scoop 1/4 cup of ice cream onto half of the cookies, then top with the remaining cookies to make a sandwich.
- Working quickly, dip each of the sandwiches in the sprinkles to coat the ice cream with sprinkles.
- Freeze for 30 minutes before enjoying. Store in an airtight container in the freezer.
