Our house is about a 5 minute walk to the kids’ school. Which is truly a blessing most days! In our crazy dash to get everyone’s shoes, jackets, and backpacks on and out the door, it’s an absolute life saver that we don’t have a long walk or drive in the morning. (“Wait, did I remember to put your lunch bags in your backpacks? Let me just unzip and check. NO NO sweetie… don’t stop walking, we’re going to be late… I can walk and zip at the same time…”)


Once I get back home after dropping them off at school, I have exactly 6 hours to fit in all my work before I have to rush back to school to pick them up again. Almost every day, I procrastinate just a little too long with my coffee, and then it’s a mad rush to get as much done as I possibly can.


I’ll be snapping photos like a mad woman, counting the minutes I have until it’s time to leave to pick up the kids again. Then exactly 2 minutes after I’m supposed to leave, I’ll abandon the camera on the kitchen table. I take a brief moment to assess whether I should wear my respectable shoes or the ugly slip on ones… (I usually go for the old comfortable shoes…) and I rush out the door, practically running the whole way there, just to make it to the school on time.


I get there just in time and give a big goofy wave to my 4 year old from across the school yard. That is, if she isn’t preoccupied in one of her very important Kindergarten conversations…

And now, every day, the very first thing my 4 year old says to me when I pick her up at the school gate is, “Mommy, did you make anything today?” And let me tell you, if I didn’t make anything fun, she gives me this look of major disappointment! In her world, it’s completely normal that her mom does crafts for a living, and that’s what she expects me to be doing every single day. (In my world, I shake my head in amazement, wondering how on earth I ever got so lucky to have this job!? But to her, it’s all she knows, and me being a blogger is just who I am. Who’d have ever thought?!)


Anyway, when I made these Easter bunny cupcakes last week, my day was no different. I didn’t have time to put everything away, so all the ingredients were still sitting on the kitchen table when my girls got home from school. I was just planning to just clean it up, but my girls were sooooooooo excited to make their own Easter bunny cupcakes! And it’s not very often that we just magically have all the ingredients for something fun sitting out, ready for them to use.


My 4 year old made her cupcake look just like mine. My 7 year old made the fur, then decided to go rogue and she decorated it with chocolate chips and jelly beans. She ate it before I even had a chance to see what she came up with!


How to Decorate Easter Bunny Cupcakes


These Easter bunny cupcakes are such a fun little treat and they are definitely easy enough for kids to make! Here’s what you’ll need:



  • Chocolate or Vanilla Cupcakes

  • Vanilla Icing

  • Large Marshmallows

  • Shredded Coconut

  • Pink Sugar

  • Pink Jelly Beans

  • Mini Chocolate Chips


I just used boxed cake mix, but if you’re making the cupcakes from scratch, I definitely recommend using my mother-in-law’s chocolate cake recipe. It’s a blast from my blogging past, but it’s an amazing recipe that turns out great every time!

Using a pair of scissors, cut a large marshmallow diagonally.

Amazingly, they look just like bunny ears!

Press the sticky, freshly cut side of the marshmallow into some pink sugar.

The pink sugar sticks to the marshmallow, giving you a perfect bunny ear!

Next, ice your cupcake with some vanilla icing. Make sure you add enough so that the chocolate cupcake is completely hidden.

Carefully hold the bottom of the cupcake and press it down into a bowl of shredded coconut.

Use the icing as “glue” for the marshmallow ears. Add a generous glob of icing to the bottom of the marshmallow ear.

Gently press a pink jelly bean into the cupcake for the nose.

I wasn’t loving the look of the plain cupcake liners, so I transferred the cupcakes into my reusable silicone cupcake liners.
