Cadbury Mini Egg Cookies

Okay, if there’s one recipe you need to try this spring, it’s these Cadbury Mini Egg Cookies. Wow. Just wow. Mini Eggs have always been one of my absolute favourite Easter chocolates. Right up there with Easter Cream Eggs… Mmmm… There’s something about the chocolate that they use… it’s totally and completely addictive! And when you put them inside of a cookie, they’re melt in your mouth delicious, especially when they are warm and melty, right out of the oven. Yum!


My two year old is learning to manipulate me. Now it’s my fault really, because I’m a complete sucker for it. I went shopping earlier this week to buy all the baking supplies for my upcoming Easter blog posts here on One Little Project. The desk in my office is absolutely LOADED with sweets, treats and other fun Easter things. My husband walked into my office and said “WHOAH… You’re leaving all this meat out for the lions!?” (Translation: “You’re crazy to leave all that candy on display where the kids can reach it.”). Meh. Whatever.

I was going somewhere with this… Oh, right! My 2 year old came into my office begging “Have some, Mommy??”, picking up every little bag on the table. I kept saying no, and I felt guilty. But then he got smart and started asking “Have only ONE, Mommy??” How can I say no to that?! What a little cutie pie.


I gave him one thing from each of the bags and he was sooooo happy. (It was mostly little bags from the bulk store so they were easy to open and close… and it wasn’t ALL candy…) And then about 20 minutes later at the dinner table he refused to eat his dinner. I made a shocked looking face and kind of shrugged my shoulders (GUILTY!) saying to my husband, “I don’t know why he’s not eating??” lol My husband warned me not to leave all that candy out. Oops. All because my cute little guy manipulated me. Little smarty pants those 2 year olds can be!


No word of a lie though, these cookies are AMAZING. They have a perfectly soft texture with a gentle, buttery flavour. Combined with the delicious chocolate in the Mini Eggs, they are totally addictive. I was so excited to share them with the kids when they got home.

Cadbury Mini Egg Cookies


The full printable recipe is at the end of this post, but here’s what you’ll need:



  • Cadbury Mini Eggs

  • Flour

  • Butter

  • Brown Sugar

  • White Sugar

  • Eggs

  • Salt

  • Baking Soda

  • Vanilla


The kids were all Ooooo’s and Ahhhh’s when I showed them the pretty little platter of cookies with Mini Eggs around the edges. (Bonus points for presentation AND offering my kids freshly baked cookies when they got home… it doesn’t happen often, so I’ll take points where I can.) “What do you think of the cookies you guys?” And they kept saying “Good! Good! They’re yummy!” And then finally they were like, “Mom, that’s the fifth time you’ve asked us. The cookies are great!!” haha… I guess I wanted some praise… lol

I think there’s a few different brands of candy coated eggs you can buy around Easter time. I’m biased towards the Cadbury Mini Eggs because I think they are amazing. I think the M&M type eggs would probably be good too. But it’s all about the good chocolate. Don’t skimp out and buy the cheap brands thinking they’ll taste the same. I just don’t think they’re all created equally?

Don’t hate me… you’re going to want to cut each of the mini eggs in half. I used my favourite Jamie Oliver Knife and it was pretty easy. But it does take a few minutes to get through them all.

It’s a lot less overwhelming to eat a cookie bite with half a mini egg in it, rather than a whole one. I mean, I guess you could leave them whole, but those will be some big chocolaty chunks…

You’ll be making cookie dough, very similar to chocolate chip cookie dough.

Except instead of adding chocolate chips, you’ll be adding mini eggs. Mmmm…

Gently stir the mini eggs into the cookie dough.

Then drop spoonfuls of the dough onto a parchment lined baking sheet.

Bake them for 10 to 12 minutes until they are golden brown.

Amazingly, the mini eggs didn’t completely melt. But the chocolate was warm, soft and delicious when they came out of the oven.

The cookies had a delicious soft texture. And they’re so pretty with all the little pops of colour from the mini eggs.

Cadbury Mini Egg Cookies

Ingredients

  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter softened
  • 3/4 cups sugar
  • 3/4 cups brown sugar
  • 2 tsp vanilla
  • 2 eggs
  • 1 1/2 cups Cadbury Mini Eggs chopped in half

Instructions

  • Preheat the oven to 375F.
  • Combine the flour, baking soda and salt. Set aside.
  • In a large bowl, beat together the butter, sugar, brown sugar and vanilla until smooth and creamy.
  • Add the eggs and continue to beat until well combined.
  • Add the dry ingredients and continue to beat until the dough is mixed.
  • Add the mini eggs to the dough and gently stir until they're mixed into the dough.
  • Drop spoonfuls of the dough onto a parchment lined baking sheet.
  • Bake at 375F for 10 to 12 minutes or until edges become golden.
