Hello again! It’s Alicia from The Baker Upstairs, and I have a sweet little cookie recipe to share with you today. These lemon white chocolate cookies are so delicious! They have all the goodness of chocolate chip cookies, but with a fun lemon and white chocolate twist. They’re so good that you’ll be sold after one bite!


Raise your hand if you’re excited that we’ve finally reached the end of the school year! My kids have 2 1/2 more weeks of school, and I am so ready for the freedom that comes with summer vacation. Somehow even after a whole school year of waking up at 6:45 a.m. every weekday, I still can’t seem to get used to it. I’m looking forward to sleeping in every morning (at least until 7:30!) and having a much more relaxed schedule. I’ve been working on our summer plans, and one of my goals is to teach my twelve year old to cook a variety of basic recipes. I want to teach her to cook things like pancakes, french toast, scrambled eggs, spaghetti, etc., so that she has a basis for cooking that she can expound on as she gets older.


Also on the list for summer are lots of fun baking days with both of my girls, and (of course) lots and lots of cookies! They’re one of our favorite things to bake, and I love that there are endless varieties. These lemon white chocolate cookies are some of our new favorites, and I’m sure they will make an appearance several times this summer. They are so good!

Lemon White Chocolate Cookies


The full recipe is at the bottom of this post, but here’s what you’ll need:



  • butter

  • brown sugar

  • sugar

  • lemon zest

  • lemon extract

  • eggs

  • flour

  • salt

  • baking soda

  • white chocolate chips



This recipe is another fun variation on my classic chocolate chip recipe, and I love that it’s so quick and easy to make. You don’t even need a mixer! Because you start with melted butter, the recipe is easy to mix by hand, start to finish. I’ve made these cookies so many times that I can have the dough ready to bake in less than ten minutes, which is perfect for those times when I get the late night cookie cravings.



I always use a cookie scoop to shape the dough so all of my cookies will be the same size. My favorite for these cookies is the 1 1/2 tablespoon (#40) scoop. The finished cookies are about 2 1/2 inches in diameter, which is the perfect size for me.



Bake the cookies until they are lightly browned, then let them cool on the baking sheet for a few minutes before moving them to a cooling rack. These cookies are so delicious when they are warm from the oven, especially with a glass of cold milk on the side. Yum!



I love the lemon flavor in these cookies, and it complements the smooth and sweet white chocolate perfectly. The cookies themselves are soft in the middle, but crisp around the edges. Cookie perfection!



This recipe makes about two dozen cookies, so they’re perfect for sharing with friends or bringing to a party. If I’m just making a batch for my own little family, I usually freeze half the dough for another day. Just scoop the dough into balls, freeze them on a cookie sheet, then put them in a freezer-safe container. When you’re ready to bake, put the dough balls on a cookie sheet in a cold oven, turn the oven on to 325, and bake for 25 minutes. They are so good!

Servings: 2 dozen

Ingredients

  • 12 tablespoons butter melted
  • 1 cup brown sugar
  • 1/2 cup sugar
  • zest of one lemon
  • 1 teaspoon lemon extract
  • 1 egg plus 1 egg yolk
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups white chocolate chips

Instructions

  • Preheat the oven to 350.
  • In a large bowl or the bowl of a stand mixer, whisk together the butter, brown sugar, sugar, lemon zest, and lemon extract until well combined. Add the egg and egg yolk, and mix until combined.
  • In a small bowl, whisk together the flour, baking soda, and salt. Add the wet ingredients to the dry ingredients, and mix until just combined. Fold in the white chocolate chips.
  • Scoop the cookie dough onto a greased or parchment lined baking sheet. Bake 12-14 minutes, or until lightly browned.
